Here are two period recipes to try. The first is from The Colonial Treasure Cookbook® and the second is traditional.
Sweet Potatoes and Apples
Put 2 cups slightly boiled sweet potatoes in a buttered baking dish. Peel, core, slice and arrange 1-1/2 cups raw apples on top. Sprinkle with 1/2 cup brown sugar. Dot with 1/2 stick butter. Bake at 350° for 1 hour.
Candied Orange Peel
Remove peel from oranges very carefully. Cover with cold water and boil 1/2 hour. Pour water off, cover again with cold water and boil another 1/2 hour. Pour water off and scrape out the inside. Cut in strips. Cook in syrup (sugar water and white syrup) until translucent. Drain, roll in granulated sugar and let dry.
